ingredients
1 pound ground beef (I used Trader Joe's kosher beef ground chuck)
1 box of Trader Jose's Taco Shells
1-2 tomatoes, diced
1 1/2-2 cups of shredded lettuce
1-1 1/2 cups of shredded Cheddar cheese
1 tablespoon olive oil
1 onion, minced
2 garlic cloves, minced
2 tablespoons chili powder
1 teaspoon cumin powder
1/2 teaspoon Mexican oregano
1/4 teaspoon cayenne pepper
1/4 teaspoon salt
or
you can use store bought. Trader Joe's sells one for $.79.
preparation
Preheat the oven to 425° F.
In a skillet over medium heat, heat the olive oil. Add the onions and cook for about 3-5 minutes or until soft and lightly browned around the edges. Stir in garlic and the remaining spices. Cook for 30 seconds. Add the ground beef, cook for about 5 minutes, stirring with a wooden spoon to break the meat.
To warm taco shells:
Place shells on a baking sheet and warm in oven for 2-3 minutes.
Remove the shells from the oven. Fill and spread the sour cream on the bottom of the taco shell, next add lettuce, beef, cheese, and top with tomatoes. We topped our tacos with hot sauce. Enjoy!
