Cafe Diva

I am lucky enough to go to Steamboat Springs a half dozen times per year. Each visit, I make a point to  stop by and enjoy Steamboat's only fine dining experience....at Cafe Diva.  Paul, the owner and sommelier, has known my family and me for about 6 years now. He always greets us with a hug and knows our favorite wine. 

During this past ski season, I finally got to meet Chef Kate at TBar's après ski. Over a Sunshine beer, I spilled the beans that I have a girl crush on her and we discussed our favorite Steamboat restaurants.  I love the flavors and spices she uses in her creations.  I always have a hard time choosing an appetizer, salad, and entree because everything looks great! Make sure to make a reservation, and Daryl is my favorite.waiter.ever!  

The warm bread served with olive oil and warmed olives with crushed almonds starts your delicious diva adventure. We didn't order the pork belly lettuce wraps, but those are my favorite!! I especially love them after a powder day in the boat.

Watermelon, Grilled Asparagus Salad

Haystack smoked chèvre, aged olive oil, balsamic vinegar reduction 

Grilled Peach and Burrata Salad

Parmacotto ham, wild arugula, candied pecans, white balsamic-ver jus vinaigrette 

Diver Scallops and Corn Saute

grape tomatoes, scallions, Parisienne potatoes, lobster-black garlic-citrus pan sauce 

Peppercorn Crusted Natural Tenderloin 

Bear Mountain Ranch Bison

bacon, wild mushroom, onion and spinach saute, horseradish cream and purple potato gallete

I love bison but I always forget how much peppercorn crusting can be overpowering my my palette.

Sea Bass

tri-colored quinoa and three pea saute, watermelon white gazpacho
