Babcia's Potato Latkes

Happy Hanukkah to my friends and family! A Girl loves her Grandma's Polish Potato Pancake recipe.
For 3 years now,a girl and her husband are the preferred latkes makers for the festival of lights using an ancient family recipe. It's hard work grating but well worth it.
Sour cream and applesauce, yes please!!!!

ingredients


3 lbs potatoes (4-5 potatoes)
1 onion
1 egg
2 Tablespoon flour
1 Tablespoon finely chopped flat leaf parsley
salt
ground pepper
cooking oil for frying


preparation


Rinse potatoes and leave skin on as it contains the nutrients and also fries well. Finely grate the potatoes. Lightly press out or squeeze out some of the water from the potatoes. This will allow more them to be more crispy not gooey. Add grated onion, egg, salt and pepper and mix together. Heat cooking oil in frying pan until hot. Add flattened dollops of potato mixture and fry for 2-4 minutes. Flip sides until desired crispness. Serve immediately from the frying pan with sour cream or applesauce.
